GLUTEN FREE PUMPKIN MUFFIN RECIPE

It’s that glorious time of year where we to start turning on our ovens, craving cozy, and baking nourishing goodies! I have been making these gluten free pumpkin muffins weekly, adding them to the kids lunches and enjoying them as snacks - they never last more than a couple days in our home!

I love baking and my family loves it too - because of this, I try to create healthier versions of baked goods for us all. But just because it’s healthier doesn’t mean it has to taste like it! These pumpkin muffins are sweet, moist, and you’d never know they are gluten and refined sugar free (I promise!).

I top half the batch of muffins with granola and half without - I love the added crunch and the kids tend to like them without!

BEST GLUTEN FREE PUMPKIN MUFFINS

1 3/4 cups oat flour 

1 1/2 cups coconut sugar 

1 t baking soda 

1/2 t salt 

1/2 t nutmeg 

1/2 t ground ginger 

2 t cinnamon 

2 eggs 

1 can pumpkin {15 oz} 

1/2 cup coconut oil {melted} 

1 t vanilla extract 

Blend all the wet ingredients then add flour + baking soda

Line or oil muffin tin, scoop 1/3 c batter into each muffin liner

*optional* top with granola 

Bake for 20-22 min at 375* allow to cool and enjoy!
