Sweet Potato Carrot Puree

HEALTHY SWEET POTATO AND CARROT PUREE

This easy and healthy sweet potato puree is a staple in our home. I serve it under roasts, pork tenderloin, and this delicious chicken recipe. The carrot and sweet potato combination is not only packed with vitamins, but also has a rich flavor profile.

I use this immersion blender - if you don’t have one you can throw the vegetables, butter and milk into your blender.

SWEET POTATO AND CARROT PUREE

2 medium sweet potatoes (peeled and quartered)

2 carrots(cut in thirds)

2 T butter

1/2 cup coconut milk

salt + pepper

  • Place carrots and potatoes in stock pan and add enough water to cover them.

  • Add a generous pinch of salt and bring to a boil.

  • Boil 20 minutes or until potatoes are soft and can be easily pulled apart with a fork.

  • Strain water and place vegetables back in the pot.

  • Add butter and coconut milk and blend with immersion blender (or put into a blender). Add more milk for creamier consistency.

  • Season with salt and pepper.

  • Serve with chicken or your favorite roast

NOTES: I like to use grass-fed butter. Coconut milk can be subbed for cream if you prefer (but the coconut milk adds a delicious, subtle sweetness!)
