Healthy Granola

MY HEALTHY GRANOLA RECIPE (KIDS LOVE IT TOO!)

Every other week I make a batch of this granola - I’ve made it for years and my family loves it. We eat it plain, over yogurt or a thick smoothie, with milk, or with fruit and honey! This recipe is extremely versatile - I sprinkled this granola on top of my healthy pumpkin muffins and it added the perfect crunch!

I love this recipe because it can be adapted to your family’s preferences; don’t care for coconut? Don’t add it! Love walnuts over almonds? Add those instead! And depending on what seeds I have on hand I’ll add those in as well (pepitas and sunflower seeds are my go to). This recipe contains heart healthy fats! I use olive oil rather than vegetable oil; the nuts, seeds, and olive oil provide beneficial fats that are great for your brain, heart, and hormone regulation.

A batch of granola takes less than 5 minutes to put together (and so much healthier than the store bought versions - check out the high sugar content on those!) and tastes delicious.

I store the granola in THESE jars (these pretty containers make it feel special AND esthetically pleasing!). Add a ribbon around the jar and this granola makes for a great hostess gift!

2 cups old fashioned oats

1 cup shredded coconut

1/2 cup raw almonds (lightly chopped)

1/4 cup raw sunflower seeds

1/4 cup raw pepitas

1/4 cup olive oil

2-3 T raw honey

1 1/2 t cinnamon

1/2 t nutmeg

pinch of salt

PREHEAT OVEN TO 350 DEGRESS

LINE A 13 X 9 PAN WITH PARCHMENT PAPER

TOSS ALL INGREDEINTS TOGETHER, MIX WELL. POUR ONTO BAKING SHEET AND PLACE IN OVEN, STIRRING OCCASIONALLY UNTIL THE GRANOLA IS LIGHTLY TOASTED AND GOLDEN BROWN - 20-24 MIN.

PULL FROM OVEN, STIR MIXTURE ON THE PAN, AND ALLOW TO COOL COMPLETELY.

STORE IN AIRTIGHT CONTAINER + ENJOY!

I use this organic coconut

I use these oats - I prefer to use sprouted oats but any old fashioned oats will do. Do not use quick oats for this recipe.
